Coffee muffins

Here’s a delicious recipe for coffee muffins that are perfect for a morning treat or afternoon snack:

Ingredients:

  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ teaspoon ground cinnamon (optional)
  • ½ cup granulated sugar
  • ½ cup brown sugar, packed
  • ½ cup brewed coffee, cooled
  • ⅓ cup vegetable oil or melted butter
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • Optional: ½ cup chocolate chips or chopped nuts

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it.

  2. Mix Dry Ingredients: In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon (if using), granulated sugar, and brown sugar.

  3. Mix Wet Ingredients: In another bowl, combine the brewed coffee, oil (or melted butter), eggs, and vanilla extract. Whisk until well combined.
